This is a sponsored post by Private Selection for Kroger. All opinions & experiences are entirely my own. Whether it’s cooking for the holidays or just a nice weeknight meal, it’s nice to have side dish recipes that taste delicious but are easy to make! And, I’ve got two for you today (one savory and one sweet)– Cinnamon Brown Sugar Butternut Squash and Parmesan Roasted Garlic & Herb Red Potatoes! SUPER yum!

These dishes are easy to make and delicious thanks to the Private Selection™ line of finishing butters from the Kroger family of stores! There are six different flavors featuring both savory and sweet varieties, including:

  • Roasted Garlic & Herbs
  • Lemon, Garlic & Herb
  • Lemon Pepper
  • Cinnamon Brown Sugar
  • Honey
  • Caramel Sea Salt

Don’t those flavors sound great?! These finishing butters make creating some delicious kitchen creations so easy! Let start with the cinnamon brown sugar squash! Just 1 butternut squash and half the container of Private Selection cinnamon brown sugar finishing butter is all you need! Start by cutting the squash (the hardest part 😉 ) and scooping out the seeds. Then cube the squash into bite-size chunks and place into a greased baking dish. Melt about 4 tablespoons of the finishing butter, pour over the squash, and toss to coat all the squash.Cover and bake for about 30 minutes at 375 degrees. Remove from the oven, uncover, (optional – add a sprinkle brown sugar over the top) and return to the oven for about 10 – 15 minutes longer…until the squash is fork tender.

Yum!

Now, how about a savory recipe?! These parmesan roasted garlic & herb red potatoes are delish and can bake at the same time as the squash if you’d like to make both sides for dinner some night!

For this delish side dish, you just need about 8-10 red potatoes, half a container of the roasted garlic & herbs finishing butter, and about 1/4 cup of shredded parmesan cheese. Cut each potato into 4-6 segments and put all the cut potatoes in a large greased baking dish. Melt the 4 tablespoons of finishing butter and pour over the cut potatoes. Toss the potatoes, cover, and bake for about 45 minutes at 375. Remove from oven, uncover, and sprinkle at least 1/4 cup (or more) of shredded parmesan cheese over the potatoes. Return to the oven until the cheese is melted and potatoes are fork tender. These potatoes are SO good (and SO easy)! In fact, next time I make these, I’ll be doubling the recipe! The blends in the butter combined with the parmesan cheese is delicious!

    1. Bummer, Ami. There are many Kroger-chain stores that carry the product depending on your location (ie. Baker’s Dillon’s, Fry’s, Harris Teeter, Smith’s, Ralph’s, etc). But, if there aren’t any, you can totally make your own infused butters at home! The store bought ones just cut out a few steps! 🙂
