Today we’re featuring this easy chicken noodle soup recipe that is truly comfort food at its best. This is not your mother’s chicken noodle soup either! It’s so easy and fast. It’s actually semi-homemade, and it literally takes 15 minutes to put together. When the noodles are done, it’s ready to eat.

Few dishes are as comforting as a hot bowl of homemade chicken noodle soup. Whether you need warmth on a chilly winter day, battling a stubborn sore throat, or are simply hungry for a wholesome and heartwarming meal, this classic easy recipe never fails to deliver. Ingredient Notes + Variations

  • Fresh herbs are wonderful in this soup. Thyme, a bay leaf, chopped fresh parsley, or rosemary are excellent additions. Dried herbs are also fine.
  • Fresh chopped onions and garlic can be added for a more savory taste.
  • Olive oil can be substituted for the butter.
  • If your personal preference is not to use a rotisserie chicken, just bake 3 chicken breasts, and shred or chop the meat into small pieces. Roasting a whole chicken in the oven is also an option, as well as using leftover chicken.
  • Instead of canned chicken broth, canned or homemade stock, or bone broth, can be used. Low-sodium chicken broth is also a good choice if you are watching your salt intake.

How To Make

  • In a large pot or dutch oven, over medium heat, melt the butter.
  • Add carrots and celery.
  • Saute for 5 – 10 minutes.
  • Add all the chicken broth, both boxes and cans.
  • Pick the meat off the rotisserie chicken and add to broth.
  • Make sure to pour any juice in the bottom of the chicken bag into the broth.
  • Bring to a boil.
  • Add almost the whole bag of noodles leaving a handful in the bag.
  • Add seasoned salt and black pepper to taste.
  • Simmer for 30 minutes.

Chicken Noodle Soup Recipe Tips

  • Any type of noodles can be used, but my favorite is Kluski. They may be a mid-western thing, because my cousin, who lives in Texas, can’t get them. In my humble opinion, they are as close to homemade as you can get out of a bag. The brand doesn’t matter…I’ve used Inn Maid, Mrs. Weiss’, and also local Amish-made noodles. They are all delicious and make the best soup.
  • Any width of noodle will work in this recipe. Thin, medium, or wide egg noodles are all good choices.
  • Of course, if you make your own noodles, that would be amazing! Homemade noodles are truly the quintessential comfort food.
  • Store any leftovers in an airtight container. This is one of those soup recipes that is just as good, if not better, the next day and beyond.
  • This soup can be made ahead, and freezes very well.
  • Crockpot chicken noodle soup: If you are a crockpot user, all you have to do is saute the carrots and celery on the stove top, then transfer them to a crockpot. Add the rest of the ingredients, and cook it on low for a few hours. It’s done when the noodles are completely cooked.
  • The two cans of Campbell’s broth add a little extra flavor because it’s thicker than normal chicken broth. If you can’t find it, or prefer not to use it, just use extra boxed broth.

Note:soup making is not an exact science. I have made countless pots of soup, and no two have turned out the same. The measurements in all of my soup recipes are guidelines, and can easily be adjusted according to your family’s tastes.

  • 1/2 teaspoon Lawry’s seasoned salt
